Carried out opening duties from cleaning the chillers and sanitizing the station before prep work. Checked for freshness of all the ingredients and mise en place. Made orders as per the required standard on line, careful and attentive to details. Mise en place and any other basic food preparations required before service. This is inclusive of all the garnishes. Ensured cleanliness always. Took inventory of the green grocer, dry goods and the frozen items in line with our dish items. As the restaurant was all vegan and plant power based, I learnt of the various dish items which I prepped for service.
In an upscale high-end hotel set up as Hemingways Nairobi is, talent and precision are displayed at its finest. Following the British brigade system of operation, my growth has seen heights.
