Your day to day
Assist in the management of Kitchen Operations including menu planning and costing, organizing special events, developing new dishes, maintaining food quality standards and comprehensive product knowledge. Adhere to local regulations concerning health, safety, or other compliance requirements, as well as brand standards and local policies and procedures. Your day-to-dayFinancial Returns:• Participate in the planning and costing of menus• Controls and monitors departmental costs on an ongoing basis to ensure performance against budgetOur People:• Supervise and train colleagues within his assigned section• Regularly communicates with staff and maintains good relations• Manpower requirement planning for assigned section and provide recommendations to sous chef. • Works with Sous Chef, Executive Sous Chef and Executive Chef to ensure the departmental performance of staff is productive. Duties include:o Conduct recruitment interviews with supervisors and provide input on hiring decisionso Conduct on the job training in accordance with the departmental standards and procedures and maintains a record of progress for each staff membero Provide input for personnel action, probation and formal performance appraisal discussions for junior staff in line with company guidelineso Coach and counsel staff in breach of hotel policies and departmental procedures, providing constructive feedback to enhance performanceGuest Experience:• Develop and write standard recipes• Develop new dishes and products • Ensure that outstanding culinary technical skills are maintained• Assist with organizing special events and special food promotions• Maintain comprehensive product knowledge including ingredients, equipment, suppliers, markets, and current trends and make recommendations for appropriate adjustments to kitchen operations accordingly• Assists in maintaining a comprehensive, current and guest focused set of departmental standards and procedures and oversees their implementation• Act on any guest feedback and provide any service recovery where required. Responsible Business:• Maintain a hygienic kitchen• Clean the kitchen and equipment• Maintain personal hygiene• Demonstrate Awareness of OH&S policies and procedures and ensure all procedures are conducted safely and within OH&S guidelines• Be aware of duty of care and adhere to occupational, health and safety legislation, policies and procedures• Be familiar with property safety, first aid and fire and emergency procedures and operate equipment safely and sensibly• Initiate action to correct a hazardous situation and notify supervisors of potential dangers• Log security incidents and accidents in accordance with hotel requirementsAccountabilityAssist in the management of Kitchen Operations including menu planning and costing, organizing special events, developing new dishes, maintaining food quality standards and comprehensive product knowledge. Supervise Commis Cook, Demi Chef de Partie and Chef de Partie. You will also help to create a desired work culture around our Winning Ways of the InterContinental Hotels Group and embrace the IHG Commitment.
What we need from you
What we need from you• 3 years’ experience as a Chef de Partie / Senior Chef including at least 1 year in supervisory capacity or an equivalent combination of education and experience. Obtained alcohol awareness certification and/or food service permit or valid health/food handler card as required by local government agency.• Demonstrates ability to interact with customers, employees and third parties that reflects highly on the hotel, the brand and the Company. • Possesses problem solving, reasoning, motivating, organizational and training abilities.
