Managing and Supervising the day to day operations of the Pastry Section.
• Together with the Executive Chef, schedules working hours of his employees, taking into consideration volume of expected business and labor cost.
• Assigns in detail specific duties to all employees under his supervision and instructs them in the performance of their work.
• Works closely with the kitchen Stewards, in keeping the bakeshop clean and orderly.
• Ensures the preparation of quality products in his section of responsibility.
• Ensures adherence to safety, security, hygiene, and grooming standards in the area of responsibility.
• Monitors use of material with a view to eliminating waste and spoilage of all products in his area.
• Constantly checks food items for taste, temperature, and visual appeal. Ensures that all dishes prepared are uniform in taste and quality that established portion sizes are adhered to.
• Ensures that the use of contaminated products in any phase of food preparation is prevented.
• Determined on the basis of expected volume of business, quantity of food products to be prepared, being careful to hold over-production or under-production to a minimum.
• Checks maintenance of all equipment located in the area he supervises, and prevents wastage and losses in his area of responsibility.
• Identifies new products, which may improve quality of food or lower food cost or both. Makes suggestions to the Executive Chef concerning improvements for more satisfied customer satisfaction or to increase volume of business or profit.
• Enforces all house rules in his area of responsibility.
• Conducts weekly meetings which Executive Sous Chef and the staff and updates the Executive Chef on pertinent issues, concerns, and development.
• Assists in the development of various hotels promotions as needed.
• Keeps the Executive Chef/ Assistant Executive Chef fully informed at all times, as to applies performance standards for all the positions supervises, keeps workers fully informed at all times as to how well they are doing, what they do well and where improvement is needed.
• Listens attentively are sincerely to worker complaints and suggestions and takes prompt action whenever indicated.
• Studies sections constantly and makes careful, well-though-out recommendations for improvements.
• Reviews guest comments on pastry products, analyses and uses these for improvement.
• Performs other duties as may be assigned from time to time.


*Post-secondary training at a culinary institution.
*Certificate in culinary arts, pastry-making, baking, or relevant field.
*5 or more years’ experience working within the food industry as a Pastry Chef, Baker, or relevant role.
*Working knowledge of baking techniques and the pastry-making process.
*Creative ability with artistic skill in decorating cakes and other desserts.
*Keen attention to detail.
*In-depth knowledge of sanitation principles, food preparation, and nutrition.
*Flexible working hours, including weekends and evenings, when necessary.
*Capable of working in a fast-paced, production environment.
