Cosa comprende il lavoro
Riportando all'Executive Chef la risorsa si occupa di:
- condurre, organizzare ed eseguire la propria partita, ha conoscenza della modalità di preparazione degli sia cotti che crudi
- Interagire con il suo Responsabile per gli ingredienti rispettando standard di qualità, stagione, territorio, il rapporto tempi preparazione/servizio
- controllare la peculiarità e la presentazione delle diverse portate
- proporre la propria interpretazione consona alla linea seguita in cucina
Reporting to the Executive Chef the resource deals with:
- lead, organize and execute their own game, have knowledge of how to prepare both cooked and raw
- Interacting with its manager for the ingredients respecting the standard of quality, season, territory, the time / service ratio
- check the particularity and presentation of the different courses
- propose your own interpretation in keeping with the line followed in the kitchen
