Responsibilities:

  • Full responsibility for smooth running of the day to day pastry and bakery operations of the culinary departments of 4 restaurants & bars including 2 Michelin starred fine dining restaurant.
  • Ensure that all operating equipment, Bakery & Pastry Kitchens are maintained in good working condition.
  • Inspect incoming products related to pastry & bakery and ensure proper storage and stock rotation.
  • Plan & oversee the production of pastry and bakery products. 
  • Implement & reinforce all hygiene and safety procedures according to hotel guidelines
  • Maintain strong communications through one on one updates and daily departmental meetings
  • Closely control the food cost, inventory and market lists 
  • In charge of creating, revising and costing of all the recipes.
  • Supervise and carry out the production standards of all pastry & bakery items in all 4 outlets according to the prescribed recipe and specifications.
  • Responsible for recruitment of pastry & bakery staff
  • Provide training and coaching related to desserts, pastry & bakery items to kitchen and service staff
  • Handle administrative duties related to the department
  • Responsible to maintain positive and good team spirit in kitchens and other relevant areas


Requirements:

  • 8 years of experience in the pastry operation preferably in luxury hotel with Michelin-starred or World 50 Best outlets
  • Acquire work exposure in Asia is an advantage
  • Excellent food & beverage and menu planning knowledge 
  • Creativity, patience and stamina desired 
  • Able to maintain composure under busy operation 
  • Strong interpersonal skills and exemplary leadership skills 
  • Good command of both spoken and written English 
  • Strong training Skills
  • A team player who is motivational 
  • Ability to maintain high levels of food quality, consistency and hygiene
  • Perform annual budgeting and cost control for his department.
  • Good administrative skills
  • Computer proficiency in major software
