Culinary Management, Intern/Trainee Exchange Visitor Program

Cosa comprende il lavoro

The larges Marriott Resort in the world is looking for Exchange Visitors under the J-1 visa to join their Culinary Management Program, this rotational Culinary Management J-1 program has a total of 4 phases which are:

PHASE ONE: Arrival, Orientation and Introduction to American Culinary Arts in the USA
The trainee will meet with Napoleon Bissaillon an eight year executive with Gaylord and a lifetime HR field expert. The Gaylord Opryland Resort and convention center is the largest nongaming convention center in the United States and offers the trainee limitless opportunities to experience American training and culture. We are proud of our industry leading STAR (Smiles, Teamwork, Attitude, Reliability and Service with a passion) training which will begin the week the Exchange Visitor (EV) arrives on the property. Customer service training in the Culinary Arts field is extremely important. American techniques of greeting, interacting and providing customer service to people is at the heart of this phase of the training.
Human Resource specialist, Napoleon Bissallion will be joined by Myk Banas, the Director of Culinary Operations, which is the largest operation of its type in the USA, will be introducing American techniques and methodologies of Culinary Arts that will part of their training while participating in the program.

PHASE TWO: CULINARY ARTS METHODOLGIES AND TECHNIQUES OF BANQUETS
This phase is designed to introduce the trainee to Gaylord Opryland's important banquet operation. As Gaylord opry land does more convention business than any other resort in the USA, we feel this is one of the biggest areas of training that the Exchange Visitors will take away from the program. This phase will cover the methodologies and techniques in a successful banquet operation.
Unlike preparing product for restaurants and other food outlets, banquets require a completely different plan of set up, production flow and execution. The trainee will receive training on all of these areas in this phase. In addition the trainee will receive training on how to prepare and cook food on the assigned stations according to Gaylord recipes, quality standards, presentation standards and food preparation checklists. The trainee will learn how to operate the ovens, stoves, grills, and other kitchen equipment need for successful production.

PHASE THREE: CULINARY ARTS COMMISSARY
This phase is designed to introduce the trainee to Gaylord Opryland's Commissary operation. This phase will cover the commissary, storage, office of operations and executive chef office areas that are used to make the resort’s various restaurants, food service outlets and banquet operation run successfully. The trainee will receive training in techniques and methodology on the proper storage, ordering, timing of all products needed to service over 5,000 people daily. Again an immense task that cannot be learned from a classroom thus again giving the trainee the necessary skills needed to be successful in their culinary career.

PHASE FOUR: CULINARY ARTS GARDE MANGER or PASTRY
This phase is designed to introduce the trainee to Gaylord Opryland's Garde Manger or Pastry operation. This phase will cover the basic production areas and kitchens that are used to make the resort’s Garde Manger and/or Pastry operations run successfully. The culinary art of pastry production is a very refined technology that must be learned by hands in experience. Especially some of the uniquely American methods of producing some of the world’s best pastry. The trainee will learn how to operate the ovens and many other pieces of equipment that are required to produce the culinary art of pastry production.
