The Carlyle, a Rosewood Hotel is looking for a highly motivated an experienced Restaurant General Manager to join our Food and Beverage Team. Areas of primary responsibility include Dowling’s at The Carlyle and The Gallery. The scope of the role is to ensure the successful performance of Dowling’s at The Carlyle and The Gallery. The applicant supervises the daily restaurant operations, assists with menu planning, maintains sanitation standards and assists servers and hosts on the floor during peak meal periods. Strives to continually improve guest and employee satisfaction and maximize the financial performance in areas of responsibility. Determines training needed to accomplish goals.

Essential Duties and Responsibilities – (Key Activities)

  • Develops and updates policies and manuals, as related to the division/department, for implementation in the field, while ensuring compliance to the same for consistency across the group
  • Excellent ability to handle high profile clientele with confidence and professionalism, responding to customer complaints and resolving them in a way that ensures the customer will return again and ensures that every customer leaves happy
  • Experience with restaurant computer systems, point-of-sale systems, word processing software, and general office equipment;
  • Ability to work in a fast-paced environment and under pressure, standing for extended periods of time.
  • Excellent verbal and written communication skills
  • The ability to work closely with the Director of Food & Beverage, Executive Chef, Sous Chefs, and Sommelier to design an effective menu and wine list while ensuring excellent product quality, efficient profitability and creative presentation.
  • Work closely alongside the Assistant Restaurant Managers to control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory and cash control.
  • Reviews staffing levels to ensure that guest service, operational needs and financial objectives are met
  • Opening and closing the restaurant and ensuring appropriate housekeeping and presentation standards are adhered to following established procedures and checklists
  • Ensuring that all restaurant paperwork is completed accurately and on a timely basis including but not limited to: daily sheets, purchase orders, accounts payable, bank deposits and employment-related forms
  • Actively participates in and leads recruitment and talent development for the division/department, to meet both current and future needs.
  • Support the hotel philosophy concerning hiring, employee relations, disciplinary action, training, counseling, evaluating, etc.
  • Is a “brand ambassador” at all times and ensures brand integrity and clarity are always maintained.
  • Models the company’s culture, vision, mission and core values at all times.
  • Foster and promote a cooperative working climate, maximizing productivity and employee morale.
  • Provides guidance and direction to subordinates, including setting performance standards and monitoring performance.
  • Participating in the community as a representative of the company
  • To assist in the preparation of the department Sales and Marketing plans
  • Maintain complete knowledge of and comply with all departmental policies, service procedures and standards.
  • Ensures that staff understand local, state and Federal liquor laws
  • Ensure that standards, inclusive of grooming and attire of staff, are maintained at a superior level on a daily basis.
  • Maintain effective flow of communication by attending required hotel meetings and conducting departmental pre-shift and monthly associate meetings.
  • Perform a variety of duties, often changing from one task to another of a different nature without loss of efficiency or composure.
  • Maintain clean and safe work area.
  • Ensure that all materials and equipment are in complete readiness for service; rectify deficiencies with respective personnel.
  • All other duties as required.

  • Maintain confidentiality of guest information and pertinent hotel data
  • Prior heavy exposure to fine dining or Michelin star rated restaurants in the Manager or assistant manager capacity
  • Thorough knowledge of food, beverage and 5 star (Forbes) standards
  • Ability to be resourceful, creative and maintain flexibility
  • Ability to perform mathematical operations with units of measure including, but not limited to dollars, cents, feet, inches, cups, pounds and ounces
  • Required to speak, read and write English, with fluency in other languages preferred
  • Must be able to exert physical effort in transporting 20 pounds, endure various physical movements throughout the work areas, reach up and down, remain stationary at times throughout work periods, and satisfactorily communicate with guests and co-workers to their understanding


Qualifications –

  • Bachelor's Degree in Hospitality Management or other related fields.
  • Computer literate and proficient in Micros, Infogenesis & Microsoft office.
  • Strong command of both spoken and written English.
  • Excellent interpersonal relationship with positive attitude.
  • Hard-working and able to work under pressure


Experience –

  • Minimum 3 years of experience in a luxury or ultra-luxury property, with at least 3 of those years in a high-end restaurant or 1 Michelin Star restaurant

Annual Salary Range : $90,000 - $105,000
