Located at the heart of the Kuala Lumpur city center, Traders Hotel by Shangri-La is looking for a dynamic, and multi-skilled talent in delivering our Asian hospitality.

As Chef de Cuisine we rely on you:

  • Responsible to the operating and safety of the Kitchen under your area.
  • To monitor day to day food preparation, presentation, and timing in accordance with the standard recipes.
  • Controls quantity by adjusting production according to projected covers, using functions sheets, etc.
  • Controls quality of produced product by overseeing preparation and maintenance of recipe cards.
  • Controls portion and presentation.
  • Obtains guest feedback by maintaining an active presence in outlets during operating hours.
  • Proposes new items, and coordinates menu development.
  • Encourages team to come up with new ideas on presentation and type of bakery, or dessert item.
  • To help to analyze the serving timing and guest feedback on food quality.
  • Practice maximum flexibility and creativity when dealing with special guests.
  • Consistently monitor performance against standards.
  • Participate in the formulation of the Kitchen Operations Manual.
  • Analyze the kitchen team training needs together with direct superior.
  • Coordinate and conduct on the job skills and knowledge training regularly.
  • Assist in ensuring adequate cooking supplies and kitchen equipment.
  • To be part of the Emergency Response Team (ERT) member in the hotel.


Requirements:

  • Diploma in Culinary/Hotel Management/Hotel school/ culinary graduate
  • Good command in speaking English. Able to speak other languages will be an added advantage.
  • With a minimum of three (3) years’ working experience in a similar capacity.
  • Good knowledge and understanding of Food Safety Management System and Hazard Analysis and Critical Control Point (HACCP).
  • Cooperative, adaptable, flexibility in working hours, good interpersonal skills.
  • Due to work permit restrictions, only citizens of Malaysia and Permanent Residents of Malaysia shall be considered.
