POSITION OVERVIEW

The position is responsible in coordinating and running the pastry section of the main kitchen, a'la carte, etc. Liaising with Executive Chef   regarding customer numbers and orders. 

RESPONSIBILITIES

  • Assists the Executive Chef in overseeing the production of all pastry goods including the ability to mix, bake, and finish the product.
  • Documents and maintains organized file on recipes
  • Effectively run the day to day pastry operations and function completely.
  • Ensures that food leaving the kitchen is of acceptable standard set by the Executive Chef.
  • Organized, precise and able to follow direction with flexibility on production demands.
  • Follows directions from set recipes and formulas accurately to ensure consistency.
  • Maintains standards of sanitation and cleanliness in the work area
  • Ability to train bakers and pastry commis.
  • Checks production schedule for variety and quantity of goods to bake according to production schedule.
  • Ensures rotation of products in the freezer so that the freshest is always available and utilized.
  • Initiates and/or assist the Executive Chef in testing, costing and in the presentation of new menu items.
  • Identifies and order products needed for production.
  • Performs all other duties as assigned.
  • Observes personal hygiene.

QUALIFICATIONS

  • Preferably college graduate or with diploma or certificate in Culinary Arts and Pastry
  • Has strong organizational skills
  • Has strong management and leadership skills
  • Excellent time management skills
  • Takes ownership of the task
  • Willing to relocate to a private, secluded island in Palawan
