Group Executive Chef

Bottega is seeking an experienced and passionate Italian chef to fill the role of
restaurant Executive Chef. This person will be responsible for managing kitchen
personnel, ensuring quality preparation of all food items and all proper
handling/storage of all food items in accordance with applicable standards. The
Executive Chef also coordinates the purchase of all food, menu development while
maintaining food and labor costs.
The ideal candidate will preferably have at least five years’ experience working in
high foot traffic fast casual and/or fine dining Italian restaurants either overseas or
in reputable establishments in major cities in China.
KEY RESPONSIBILITIES
Food and Labor Costing
-Make sure ingredients are ordered from suppliers on a timely basis
-Monitor food costs by maintaining proper purchasing and sales record
-Review all waste logs prior to end of shift
Menu Development
-Responsible for scheduling and leading testing and tastings for new menu items
-Standardize recipes for each item
-Communicate changes and developments with managers and stay aware of
reservations
-Train and implement all staff on updated dishes, menu descriptions, and line up
Staff Development and Training
-Train and supervise cooks and kitchen Management
-Maintain a safe, secure, and healthy facility environment by establishing, following,
and sanitation standards and procedures
-Comply with health and legal regulations; and report and manage facility issues
-Communicate and resolve maintenance issues within the kitchen
REQUIREMENTS
-2+ years’ experience as a Chef de Cuisine or Executive Chef in upscale restaurants
Bachelor’s degree in Hospitality, Culinary Management or similar preferred
-Demonstrated ability to lead inspire team members to meet and exceed standards
-Proven problem-solving, critical thinking and decision-making skills
-Ability to perform essential job functions under pressure whilst maintaining
professionalism at all time
-Ability to perform in a fast-paced, dynamic work environment
-Ability to work evenings, weekends and holidays, including a variable schedule per
the needs of the business
-Proficiency in utilizing programs including Gmail, chat gpt, Microsoft Office Suite (Word,
Excel, Outlook & PowerPoint)
