The role of the Food & Beverage Manager

The Food & Beverage Manager’s main responsibility is to oversee the Outdoor Pool operation during the Summer and Winter Seasons, launching and operating F&B activations, and support the F&B Division as a whole when in off season timing to include Room Service, Banquets, and Stewarding departments.  The Manager will also be responsible in planning and executing special events and activations. Seasonal activations that include holiday celebrations such as Thanksgiving, Christmas, and New Years – activations will and can include Brunch as well as a la carte events. In addition, the Food & Beverage Manager is expected to plan special pop-up events that could include dinner under the stars and winter village / ice rink activations. Creating a revenue stream with ROI and setting us positively apart from the competition. This position is required to understand the ins and outs of a Food and Beverage operation, ensuring that employee and guest satisfactions are met and acts as a liaison between all F&B departments. Health and Hygiene requirements are followed, trained, and practiced daily in accordance with the Four Seasons LWC Ecosure audit as well as local guidelines of the Health Department. The Food & Beverage Manager is expected to assist Room Service and Banquets in ensuring all staff are adhering to the appropriate service standards. 

Responsibilities:

  • Select, train, evaluate, lead, motivate, coach, and discipline all employees in the Food & Beverage outlets that you directly manage to ensure that established cultural and core standards are met: long-range strategic planning for outlet operation.

  • Work harmoniously and professionally with co-workers and supervisors

  • The ability to be visible in the operation, provide recognition, promote good public relations, and handle complaints, concerns or special requests for guests, clients, and group contacts.

  • Describe and ensure quality of all food items, ingredients, and preparation methods, as well as provide knowledge of wine and spirits in an elegantly appointed environment dedicated to an attentive and distinctive experience in a Food & Beverage outlet setting.

  • The ability to work closely with the Hotel Manager, Assistant Director of Food & Beverage, Executive Chefs and other Culinary Leaders to design effective menu and amenity options while ensuring excellent product quality at a fair price and attend regular operational meetings to ensure effective coordination and cooperation between departments. 

  • Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory and cash control.

  • Observe physical condition of facilities and equipment in the outlet and make recommendations for corrections and improvements as needed. 

  • Comply with Four Seasons’ Category One and Category Two Work Rules and Standards of Conduct as set forth in EmPact.

  • Work harmoniously and professionally with co-workers and supervisors.



Preferred Qualifications and Skills:

  • Requires a working knowledge of division operations as well as Four Seasons cultural and core standards, policies, and standard operating procedures.  Working knowledge is generally learned on-the-job.

  • Knowledge of food & beverage service, cost control, labor control, maintenance, merchandising, and accounting.

  • Requires ability to operate computer equipment and other food & beverage computer systems.

  • Requires reading, writing and oral proficiency in the English language.
