As aService Manager-Pastry, we rely on you to:

作为饼房厨师长,我们希望您承担以下职责:

  • The Pastry Chef is responsible for all hotel pastry and bakery products, making sure that they contribute to the overall success of outlets and banquets.
  • Participate in the planning and costing of menus, works with Chinese Executive Chef in the preparation and management of the Department’s budget.
  • Assist with organizing special events and special food promotions.
  • Maintain comprehensive product knowledge including ingredients, equipment, suppliers, markets, and current trends and make recommendations for appropriate adjustments to kitchen operations accordingly.
  • Serves fresh food to all the guests, is consistent in quality, and reflects the style of the outlet concept.
  • Closely supervises cooking and other Kitchen personnel and coordinates their assignments to ensure economical and timely food production.
  • Ensure methods of food preparation and cooking, sizes of portions, and garnishing of foods to be prepared in prescribed manner.
  • Supervise and Training of assigned employees, works with Chinese Executive Chef in manpower planning and management needs.
  • Establishes and enforces nutrition and sanitation standards for restaurant.
  • To insist on a uniform visual appearance of all dishes prepared. Presentation and garnish must be prepared according to standards.
  • To check stores and refrigerators and be responsible for the proper storing and recycling of leftovers
  • To work closely with receiving andstoreroom. To make sure that received goods are of the standard quality and according to hotel’s specifications
  • To constantly be alert on freshness, presentations and temperature of food served

  • 确保食物准备及烹饪的方法,食物的尺寸规格,以及食物的装饰等,按照所规定的标准去准备。
  • 管理和培训属下员工,和中餐行政总厨一起进行人力规划和管理需求
  • 建立及加强食品营养及餐厅的卫生环境。
  • 坚持所有菜肴的视觉外观统一。展示和装饰必须按照标准准备
  • 检查库房和冰箱,负责合理地储存和废物利用
  • 与收货部门和库房密切联系。确保所收货 物符合饭店规定的质量标准。
  • 对所提供食物的新鲜度、外观和温度保持警
