Job Synopsis:

The internal HACCP is a high-potential, mid- to upper-level manager, accountable for accomplishing the full deployment, monitoring and ongoing training of the HACCP system (Hazard Analysis Critical Control Points) at the property. He/she is a Project Team leader who has specialized training in the methodology and tools, and then mobilizes the team members, and others in the organization, to accomplish the HACCP goals specified by the management and Two Seasons Hotel & Hotel Apartments. The Food Safety and Hygeine Officer must both influence others to overcome barriers, and coach/train team members in the methodology, giving imputes and support to the management. The Cluster HACCP Manager will report directly to the Hotel Food & Beverage Manager

1. GENERAL TASKS AND RESPONSIBILITIES:


• Implementationof all food safety policies and procedures.
• Ensure risk assessments for food preparation, food and beverage and banqueting areas are up to date and reviewed regularly and that staff have been trained in safe systems of work.
• Set up of HACCP team, which will have regular weekly / monthly meetings
• Perform an initial in-depth audit, and follow-up, of all local & international food & beverage suppliers. Implement local SOPs, program for ongoing monitoring and implementation of annual supplier audits and accreditation.
• Perform monthly internal food safety inspections. Assist annual corporate third party inspections and assure prompt action is taken on issues to be followed up.
• Overview of pest control contract as per Hotel and Dubai municipality (DM) guidance.
• Ensure compliance with local legislation in relation to HACCP and food hygiene
• Training of food handlers in food safety policy and procedures, ensuring that
• Food handlers are trained as commensurate with their responsibilities i.e. Advance Food Hygiene for Executive Head Chef.
• Ensure follow-up investigation and process improvement, when cases of alleged food poisoning arise – alleged or factual. Assuring that all hotel food hygiene practices safe guard the hotels integrity.
• Develop and implement a local SOP for handling guest complaints relating to cases of food poisoning and other sanitary related issues.
• Be the point of contact and act upon instructions/suggestions put forward
• Train, coach and mentor a local candidate to take over the HACCP responsibility and the role of ongoing maintenance and continual improvement of the HACCP program / system within the hotel.
