As a Chef De Partie at Eastern & Oriental Express, A Belmond Train you are part of a team that brings culinary visions to life through immersive, unique, and hand-crafted gastronomic experiences. In this role, you will work alongside the Head Chef and skilled colleagues to prepare the highest quality food from recipes. Primary responsibilities include :

  • Ensure that all dishes prepared to meet the train’s exacting standards.
  • Prepare, cook, and plate dishes according to established recipes and guidelines.
  • Ensure that the quality & quantity standards of preparations and presentations are adhered to.
  • Supervise and train junior kitchen staff working with you in your section.
  • Provide guidance, ensure proper techniques, and maintain a clean and organised station.
  • Regularly taste and adjust seasonings as needed.
  • Assist in ordering and maintaining inventory.
  • Adhere to food safety and sanitation guidelines, maintaining a clean and hygienic work area.


Eastern & Oriental Express is relaunching on February 19, 2024. In preparation, Belmond is recruiting a new team of genuine, authentic people with a passion for travel, discovery, and guest interaction.   • 2-4 years relevant experience within a similar role.
  • Previous experience as a Chef de Partie or similar position in a fine dining or upscale restaurant.
  • Culinary training or degree in culinary arts is preferred.
  • Demonstrated ability to be innovative and creative.
  • Strong culinary skills and technical expertise.
  • Working knowledge of food safety and sanitation regulations.
  • Time management and organisational skills.
  • Ability to work in a high-pressure, fast-paced environment.
  • Knowledge of wine and beverage pairings is a plus.

International exposure will be considered a plus. You must speak English. Additional languages, such as Japanese, Korean, Cantonese, French and German, are a benefit. We welcome a diversity of backgrounds, ethnicities and religions.

Experience in the hospitality industry is a bonus, but not a necessity. You could be from an independent restaurant or bar, have worked in luxury retail or private villas, or be a tour guide.
