The role of Executive Sous Chef

Assist the Executive Chef in planning and managing all aspects of food preparation in all areas of the hotel including IN Room Dining, Restaurants, Banquet, Residences, and the employee Dining room. Executes Culinary Strategy to meet Business needs and maximize profit. 

Essential Functions

  • Supervise Chefs and other kitchen personnel with responsibility for hiring, performance management, career guidance, training, and discipline
  • Fosters and promotes a cooperative working climate, maximizing productivity and employee morale
  • Participates in developing the vision of food and concepts trends consistent with company objectives and initiatives
  • Assist in developing short- and long-range plans to meet business needs and maximize profits
  • Assist in ensuring that kitchens provide nutritious, safe, appealing and properly flavored food
  • Assist in establishing and implementing quality standards in cooking methods, presentation techniques, portion control and retention of nutrients
  • Assist in developing and managing the budget
  • Ensures a safety and sanitary work environment for all employees
  • Identifies situations which compromise the departments standards and rectifies these immediately
  • Assist restaurants and catering personnel in developing and generating annual sales
  • Assist with developing special menus for functions and special guest profile
  • Interact with restaurants guest to solicit feedback and ensure guest satisfaction
  • Determine food, labor, and overhead costs. Direct food apportionment policy to control cost and minimize labor
  • Creates, develop recipe, plan, and prices menu items. 
  • Review sales and food cost daily and resolves any discrepancies with finance and accounting. 
  • Minimize waste and maintains controls to attain forecasted food and labor costs. 
  • Research local and imported products, New Suppliers, and special markets. 
  • Interact with product vendors to ensure that the hotel receives the best product. 
  • Provides Culinary instruction and demonstrates culinary techniques to kitchen staff. 
  • Manage daily orderings approval and manage food cost. 


Knowledge and Skills

Education:

College degree preferably specializing in hotel/restaurant management or culinary arts, or equivalent experience is required.   

Experience:

  • Three (3) to five (5) years previous experience in multiple culinary/food & beverage department head positions specializing in pastry design and creation.   
  • Three (3) to five (5) years previous experience in multiple culinary/food & beverage management positions.   


Skills and Abilities:

  • Requires knowledge of the ability to operate computer equipment
  • Knowledge in Birchstreet system
  • knowledge of menu planning, food presentation and banquet event service operation. 
  • knowledge of Food Safety, Sanitation, Storage, Storage and Maintenance
  • Ability to read, speak and write English and Spanish
  • Understand and familiar with quality standards and service standards of the hotel
  • Highest level of integrity and transparency
  • Apply an ethical approach to the outcome of situations
  • Strong interpersonal and relationship-building skills
  • Reasonable problem-solving, decision-making and conflict resolution skills
  • Work in a safe, prudent and organized manner
