Your day to day

As the Mixologist of Bar Fellini, The Loyall Counting Room and Matria your role will craft beverages and/or serve food for the customer in a prompt and courteous manner while maintaining a high level of quality and consistency. Key Accountabilities

  • Develop quarterly cocktail menus in alignment with Core Beverage mandates and the concept of the bar or/and restaurant.
  • Ensure menu cohesion and adherence to stylistic guidelines.
  • Drive PR opportunities through innovative cocktail creations.
  • Maintain an organized back bar and establish relationships with distributors and suppliers.
  • Stay updated on industry trends through reading and attending events.
  • Curate a spirits selection that aligns with the restaurant or bar concept and complies with Core Beverage standards.
  • Provide training materials for bartenders and front-of-house staff.
  • Conduct quarterly staff-wide training sessions during menu rollouts.
  • Collaborate with PR teams to identify media opportunities and drive positive attention to the establishment.
  • Develop cleaning schedules and report equipment damage to management promptly.
  • Assist in developing pars and assembling weekly liquor orders.
  • Develop cocktails and menus to maintain budgeted liquor costs.
  • Ensure Core Beverage compliance throughout the establishment.
  • Maintain current and balanced beer and wine lists, providing tasting notes and training material.
  • Make recommendations for hiring bar and cocktail staff.
  • Assist in staff evaluations based on performance.
  • Event Representation:
  • Represent the establishment at offsite events as needed.
  • Promote teamwork and quality service through daily communication and coordination with other departments. 
  • Perform other duties as assigned.


 

What we need from you

Proven experience as a Mixologist/Bartender in a high-volume luxurious establishment.

Extensive knowledge of spirits, cocktails, and industry trends.

Ability to work collaboratively with management and staff.

Certification in mixology or bartending is a plus.

Fitness – you’ll be on your feet most of the day with lots of bending and kneeling.

Strength –  you’ll need to lift, push and pull big objects like barrels and crates up to 50lbs (23 kg).

Literate – you’ll need a good grasp of reading, writing and basic maths.

Flexible – night, weekend and holiday shifts are all part of the job.

Experienced – you’ll know how to prepare a wide range of drinks. Ideally with formal bartending training.

Compliant – as well as meeting local laws on food handling and serving alcohol, you’ll be above the minimum age required and fluent in the local language.

Articulate – a great communicator, you’ll be warm, welcoming and easy to talk to.
