As a kitchen sous chef, you are responsible for all kitchen operations and you can have a great impact on our guests through the kitchen. It is your duty to plan the purchase, oversee the delivery and preparation of food. It is also part of your job to perform administrative tasks, such as budgeting and controlling expenses. Your main duties are to creatively compose the menu, test recipes and ensure flawless presentation of dishes. The chef de cuisine is not a stand-alone role and requires excellent communication and teamwork with the Executive Chef, restaurant manager, kitchen employees, restaurant hostess and sous chef.
We are looking for a creative person who is not afraid of experimentation and easily collaborates with other employees, at all levels.
• Manage, inspire and motivate the team.
• Set the schedule, assign tasks and solve problems on the work floor.
• Define and supervise adherence to kitchen procedures, such as HACCP, safety, order, cleanliness, food planning and production.
• Conduct regular quality checks and study necessary changes to all kitchen operations.
• Ensure excellent taste and quality of food at all times.
• Unleash creativity by modifying the Restaurant menu, regularly testing recipes and creating new and interesting pairings of wines and dishes together with the Restaurant Manager.
• Plan meals for daily consumption and for events, in line with guest preferences, event scope, any allergies, and beverage pairings.

À propos de vous

• Experience in food service in various settings and events; banqueting experience will be a plus, as well as Michelin starred restaurants experience.
• Proven leadership skills.
• Entrepreneurial-minded, employee-centered and prioritizes safety.
• Able to work in stressful situations and solution-oriented.
• Organized and consistent, with an eye for detail, especially when it comes to food presentation, service quality and speed.
• Familiar with menu planning, allergens, food management and staff expenses.
• Advanced food preparation techniques.
  • Langue requise: Italien. Anglais est un plus

For those who want to "go beyond" there is the exclusive table for two persons obtained from a niche which overlooks the kitchen and allows to enjoy a menu freely proposed by the Chef. The same niche continues beyond the glass that separates the room from the kitchen, offering an intimate table for four persons which guarantees an higher level of privacy. The restaurant also has a private room equipped with a wall-mounted screen that makes it suitable for business meetings for up to eight people.
