For our two Michelin Star Pastry Kitchen we are looking for personable, passionate and driven Pastry Demichefs de Partie
Key Responsibilities:
-Support & assist the Pastry Chef de Partie & Pastry Chef
-Step in to oversee in the Chef de Partie’s absence, maintaining the same level of quality and efficiency
-Execute mise en place and cooking tasks as per instructions
-Ensure and maintain precision, consistency and attention to detail in all pastry items
-Work closely with the kitchen and service team to ensure smooth service and timely delivery of all pastry items
-Guide and train Commis Chefs, ensuring they understand and perform their tasks correctly
-Adapt to last-minute changes, special guest requests, or dietary requests with efficiency and creativity
-Maintain a lean and orderly cooking station and adhere to health and safety standards

Requirements and skills:
-Fluent in English, German and/or Portuguese are a plus
-Experience in fine dining or Michelin-starred restaurants, specifically in pastry or dessert preparation
-Formal culinary training or equivalent hands-on experience
-Familiarity with ingredient quality control and mise en place management
-Keen attention for detail, ensuring consistency and excellence in every pastry dish
-Excellent organization skills and multitasking abilities in a fast-paced environment
-Effective communication skills, with the ability to collaborate across the kitchen team
-Leadership potential to supervise and guide junior staff such as Commis Chefs
-Creativity and attention to detail in designing and executing pastry presentations
-Ability to thrive under pressure in a fast-paced, high-energy environment
-Familiarity with health and safety regulations and a commitment to maintaining impeccable hygiene standards
-Passionate about gastronomy, with a commitment to upholding the highest culinary standards
-Dedication to continuous learning and professional development in the culinary arts

Vila Joya – Feels like Home, tastes like Paradise!
Vila Joya is located above the Atlantic and is surrounded by an evergreen garden with direct access to the sea. With its 13 rooms and 9 suites, a two Michelin star gourmet restaurant and 350m2 spa and fitness area, this Moorish style building - formerly the private summer residence of the German Jung family - is now one of the most beautiful privately-run boutique resorts in Europe.
The terrace with views across the garden and towards the Atlantic forms the heart of Vila Joya and as such is the hub and focal point for all culinary delights. From breakfast to dinner, the terrace is the place where guests come together. At lunch- and dinnertime, the terrace is transformed into a two Michelin star restaurant headed by the patron Dieter Koschina. The Austrian chef has been working at Vila Joya for more than 28 years and secured his first Michelin star in 1995 and his second in 1999. Chef Koschina is an essential part of the gem which is Vila Joya – and he is also one of Portugal’s highly decorated chefs.
