Join our Team

The Director manages the Food & Beverage Operation which includes all restaurants, bars & lounges, banqueting & outdoor catering, room service and private bars. The primary responsibilities for this position are to ensure our guests receive the highest level of food quality and service, manage and develop a team, devise and monitor an annual budget, manage labor control and operating expenses and develop relationships with key suppliers and industry associates. We are looking for an experienced Asst. Director of Food & Beverage individual who has a solid knowledge& experience of food & beverage, has creativity and flair, and is able to evidence good business acumen, a strong work ethic and people-management skills. University diploma, hotel administration degree and postgraduate preferred.

Minimum of 6-7 years experience in Food & Beverage in management positions in the hotel (preferably Four Seasons) Operation hotel experience preferred.

  • Excellent computer skills (Microsoft Office-Adobe Reader) including general command of PMS and POS System


Key Functions

PEOPLE

  • Pro-actively works with Human Resources on recruitment.
  • Actively networks within the community to attract potential candidates for recruitment purposes. Meets established goals in Employee Turnover.
  • Monitors the completion of the First Day Orientation Checklists and Training Checklists by required dates.
  • Regularly reviews the Standards Training Manuals for all food & beverage operational positions and development of an effective group of divisional designated trainers.
  • Stimulates Department Heads to develop creative training methods to ensure that standards are known and able to be performed by all staff.
  • Actively participates and pro-actively nominates managers to attend FS Management Development Programs. Supports and ensures new manager’s orientation (NMO) is completed within the first 30 days.
  • Conducts timely and quality reviews and ensures all Department Heads follow suit.
  • Deals with all disciplinary and grievance matters in a consistent manner and ensures each issue is appropriately documented.
  • Actively addresses any issues arising from Direct Line Meetings and Opinion surveys, ensures follow-through and provides preventative measures to avoid reoccurrences.
  • Monitors that departments meetings are conducted on a monthly basis with minutes circulated.
  • Conducts effective divisional meetings; appropriately communicates and completes any action items.
  • Receives positive results on Employee and Management Opinion Surveys.


PRODUCT

  • Ensures the delivery of Four Seasons service levels for the breakfast, lunch, afternoon tea, beverage service, dinner, private bar, banquet/conference, amenity and special request of the guest.
  • Organizing and conducting continuous and routine testing of core and service culture standards with the staff and setting the example for standards execution.
  • Creating a positive climate for standards awareness execution and testing.
  • Serves as senior management representative in resolving guest problems/complaints; manages Glitches effectively.
  • Ensures all Food & Beverage departments are immaculate, highly organized and well maintained to provide the optimal working environment for the staff.
  • Acts as  the driving force of product improvements and innovations with the F&B Departments Heads?
  • Ensures guest feedback systems are operating well and a fast recovery system is in place.
  • Ensures the highest standards of hygiene and sanitation are maintained throughout the F&B areas in accordance with FS standards and Government regulations.
  • Achieves agreed goals in Richey scores and Guest comment Card scores; Improves scores as agreed.


PROFIT

  • Closely monitors and effectively manages labor costs; plans vacations effectively and ensures proper service levels are provided with the labor standards, while minimizing OT.
  • Complies with Wage & Hour Laws.
  • Consistently monitors and effectively manages expenses; closely monitors purchase requests, checks and other disbursements paperwork in a vigilant fashion.
  • Promotes & provides a safe working environment: is involved in accident follow-up, transitional duties, and future prevention of accidents
  • Prepares annual budget for revenue and costs; offers sound proposals for annual capital requirements.
  • Actively participates in monthly forecasting of expenses and revenues.
  • Develops /Programs/promotions  to attract & retain customers. Effective profitability initiatives .
  • Install yearly Marketing Plan key strategies are in place and have been communicated to staff.
  • Quickly disseminates information to appropriate departments (e.g. short- term occupancy fluctuations, special requests, last minute function changes).
  • Department Managers are fully informed of the financial performance of the division on an on-going basis.


KEY TASKS

  • Safeguard guests and employees with knowledge and application of safety, accident prevention, fire drills and first aid.
  • Develop and maintain effective communications between all operating departments.
  • Respond properly in any hotel emergency or safety situation.
  • Perform other tasks or projects as assigned by hotel management and staff.
