Cosa comprende il lavoro
Per il nostro laboratorio di pasticceria interno, ricerchiamo un Pastry Chef de Partie creativo e preciso. La figura si occuperà della realizzazione della linea dolce, coprendo le esigenze della prima colazione, del ristorante, del banqueting e del room service.
AMBITO DI APPLICAZIONE Garantire un'offerta dolciaria di altissimo livello, curando la preparazione di lievitati, dessert al piatto, mignon e torte, nel rispetto degli standard estetici e qualitativi della struttura.
OBIETTIVI GENERALI Il compito è svolto in modo soddisfacente quando:
- I dessert e i prodotti da forno presentano un gusto eccellente e un'estetica impeccabile.
- I buffet dei dolci e delle colazioni sono costantemente riforniti e curati nella presentazione.
- Le grammature, le ricette e le tecniche di lavorazione sono eseguite con precisione assoluta.
PRINCIPALI RESPONSABILITÀ
- Produzione: Preparazione di dessert al piatto, pasticceria secca, mignon, panificazione di base e lievitati per le colazioni.
- Sviluppo: Collaborazione con l'Executive Chef/Head Pastry Chef nell'ideazione di nuovi dessert in linea con la stagionalità.
- Controllo Qualità: Verifica della consistenza, del sapore e della presentazione di ogni prodotto prima dell'uscita.
- Gestione Laboratorio: Monitoraggio delle scorte di ingredienti specifici, ordini al magazzino e controllo rigoroso delle scadenze.
- Igiene: Rispetto maniacale delle norme igienico-sanitarie specifiche per i laboratori di pasticceria (HACCP).
REQUISITI:
- Esperienza: Esperienza di almeno 2/3 anni come pasticcere in hotellerie o in laboratori di alta pasticceria.
- Competenze Tecniche: Conoscenza approfondita delle tecniche di pasticceria classica e contemporanea, bilanciamento delle ricette e lavorazione del cioccolato/zucchero.
- Soft Skills: Creatività, precisione chirurgica, cura del dettaglio e passione per l'estetica del piatto.
