Reports to: Executive Head Chef

 

About the Role

We are seeking an experienced and driven Head Chef  to support the Executive Chef in leading the culinary operations of our 5-star hotel. This role is pivotal in ensuring the consistent delivery of exceptional food quality, creativity, and service standards across all dining outlets. The Head Chef will play a hands-on leadership role in the kitchen, supervising team members, maintaining operational excellence, and contributing to menu development in a luxury hospitality environment.

Key Responsibilities  

·      Assist the Executive Chef in managing all kitchen operations and daily food

·      Supervise and coordinate the activities of kitchen staff to ensure smooth and efficient service

·      Ensure all dishes are prepared and presented to the highest quality and consistency standards

·      Take responsibility for the kitchen in the absence of the Executive Chef.

·      Monitor baking times and temperatures to ensure product quality.

·      Support in menu planning, recipe development, and seasonal updates

·      Forecasting and preparation of goods in advance.

·      Shape, score, and finish products consistently.

·      Maintain cleanliness and organization of the bakery and equipment.

·      Follow food safety, hygiene, and sanitation standards (HACCP).

·      Manage ingredient stock and report shortages.

·      Assist with product development and seasonal items when required.

·      Assist in ordering and receiving deliveries, checking quality and storage compliance. 

·      Maintain strict hygiene, food safety, and HACCP standards across all operations. 

·      Ensure cleanliness and organisation of all work areas, equipment, and storage spaces. 

·      Adhere to estate policies and safety procedures, reporting any maintenance or compliance issues promptly. 

·      Support testing and implementation of new dishes in collaboration with the Executive Head Chef. 

 

Required Experience & Skills   

·      Proven experience as a Sous Chef or strong experience as a junior sous chef in a high-end hotel or bistro  establishment

·      Formal culinary qualification or equivalent professional training

·      Good time management and attention to detail

·      Ability to work independently and as part of a team

·      Excellent organisational and time-management abilities, with a proactive approach to service readiness. 

·      Strong understanding of HACCP, food hygiene, and kitchen safety standards. 

·      Ability to work independently during early shifts. 

·      Passion for culinary excellence and guest satisfaction. 

·      Eligibility to work in Ireland
