Medina Restaurant is a Michelin Recommended dining destination, known for delivering refined cuisine and exceptional guest experiences in a premium setting. Xara Collection is currently seeking an experienced and passionate Restaurant Manager to lead our front-of-house operations and uphold our high standards of service excellence.
The Role
As Restaurant Manager, you will take full responsibility for the day-to-day management of front-of-house operations, ensuring seamless service, outstanding guest experiences, and strong team performance. You will play a key role in maintaining our reputation for quality while supporting the commercial success of the restaurant, including private events and functions.
Key Responsibilities
- Oversee daily restaurant operations, ensuring smooth and efficient service
- Lead, train, and motivate the front-of-house team
- Maintain exceptional service standards aligned with Michelin Recommended expectations
- Manage reservations, table allocation, and service flow
- Handle guest feedback and resolve issues professionally
- Coordinate and oversee private events, functions, and special occasions
- Ensure compliance with hygiene, safety, and allergen regulations
- Monitor financial performance, staffing levels, and operational costs
- Work closely with the kitchen team to ensure seamless service delivery

What We’re Looking For
- 3–5 years’ experience in a supervisory or management role within a high-end or fine dining environment
- Strong leadership and team management skills
- Excellent communication and organisational abilities
- In-depth knowledge of food & beverage operations and guest service
- Relevant qualification in Hospitality Management (ITS Diploma or equivalent preferred)
- Valid Food Handler Licence (as per Maltese regulations)
- Lingua richiesta: Inglese.
