Prepare and serve a selection of wines as per the established Four Seasons Standards.
Confirm guest orders including any special needs or requests from the restaurant server using the hotel’s point-of-sales system, check completed orders with the guest’s original order.
Service and take orders for wines from guests as per the request from any restaurants.
Anticipate guest needs, ascertain satisfaction, offer suggestions, and respond urgently and appropriately to guest concerns and requests.
Properly and accurately close guest checks; process cash and credit card payments; properly settle voided checks or complimentary items.
Is responsible for the monthly or weekly wine inventory.
Is responsible to maintain the wine cost by as per the set standards of the Four Seasons. Controls spillage, spoilage, over pour or undercharging the guests.
Maintains the spoilage report of wines.
Checks wines storage and temperature of all wine cellars of all restaurants.
Follow up with assistance of finance for all wine contracts and tracks the rebate amount.
Creates a profitable wine by glass program and banquet wine program.
Comply with Four Seasons’ Category One and Category Two Work Rules and Standards of Conduct as set forth in EmPact.
Work harmoniously and professionally with co-workers and supervisors.
Takes trainings for wine program for team members and creates wine champions in all restaurants.
Assist with wine inventory.
Wine cellar temperature and storage.
