- Prepare and serve a selection of wines as per the established Four Seasons Standards.
- Confirm guest orders including any special needs or requests from the restaurant server using the hotel’s point-of-sales system, check completed orders with the guest’s original order.
- Service and take orders for wines from guests as per the request from any restaurants.
- Anticipate guest needs, ascertain satisfaction, offer suggestions, and respond urgently and appropriately to guest concerns and requests.
- Properly and accurately close guest checks; process cash and credit card payments; properly settle voided checks or complimentary items.
- Is responsible for the monthly or weekly wine inventory.
- Is responsible to maintain the wine cost by as per the set standards of the Four Seasons. Controls spillage, spoilage, over pour or undercharging the guests.
- Maintains the spoilage report of wines.
- Checks wines storage and temperature of all wine cellars of all restaurants.
- Follow up with assistance of finance for all wine contracts and tracks the rebate amount.
- Creates a profitable wine by glass program and banquet wine program.
- Comply with Four Seasons’ Category One and Category Two Work Rules and Standards of Conduct as set forth in EmPact.
- Work harmoniously and professionally with co-workers and supervisors.
- Takes trainings for wine program for team members and creates wine champions in all restaurants.
- Assist with wine inventory.
- Wine cellar temperature and storage.
