Job Description
We are seeking an experienced and passionate Chef de Partie (Asian Cuisine) to join our culinary team at Constance Prince Maurice, a prestigious luxury resort in Mauritius. The Chef de Partie must have a strong ambition to progress into a Sous Chef role. In this pivotal role, you will lead the Asian cuisine section of our kitchen, overseeing the preparation and presentation of authentic Asian dishes whilst maintaining the highest standards of quality and innovation. You will work collaboratively within our kitchen brigade to deliver exceptional dining experiences to our guests, combining traditional Asian cooking techniques with contemporary culinary creativity.
- Oversee the daily operations of the Asian cuisine section, ensuring all dishes are prepared to exacting standards and presented with meticulous attention to detail.
- Prepare and present authentic Asian dishes (Chinese, Japanese, Thai, or Fusion) to the highest standards.
- Develop and refine Asian menus, creating innovative dishes that showcase your culinary expertise and knowledge of Asian flavour profiles.
- Supervise Demi Chefs de Partie, Commis Chefs, and kitchen assistants.
- Lead and provide on the job training to junior kitchen staff, providing guidance on technique, food preparation, and professional development.
- Maintain rigorous food safety and hygiene standards, ensuring full compliance with all health and safety regulations.
- Manage stock control and inventory for your section, minimising waste whilst maintaining optimal ingredient availability.
- Collaborate with the Head Chef to ensure seamless kitchen operations during service.
- Monitor food costs and portion control, contributing to the efficient management of the kitchen budget.
- Maintain impeccable standards of personal hygiene and professional appearance at all times.
- Ensure consistent quality and presentation of all dishes served to guests.
Qualifications
- Minimum 3 years of experience in a similar role within a luxury hotel or high-end Asian restaurant.
- Strong expertise in Asian culinary techniques, ingredients, and presentation standards.
- International exposure is highly desirable.
- Fluent in English; additional languages are an advantage.
- Strong ability to work under pressure while maintaining exceptional quality.
- Passion for gastronomy and luxury hospitality.
- Flexible to work shifts, including evenings, weekends, and public holidays.
