Course content: -Foundations: creams, shortcrust pastry and sponge cake. -Chocolate: tempering, pralines, finishing, decorations -Puff pastry and cream puffs -Single serve desserts -Italian style petit fours -Italian artisanal gelato -Food studies and Italian Culture
