Job Description
We are seeking an experienced and innovative Chef De Cuisine to lead our Mediterranean cuisine operations at Constance Ephelia, Seychelles. In this prestigious role, you will oversee the culinary vision and execution of our Mediterranean restaurant, combining classical techniques with creative flair to deliver exceptional dining experiences for our discerning guests. You will manage a talented kitchen brigade, maintain the highest standards of food quality and presentation, and contribute to the resort's reputation for culinary excellence.
- Lead and manage the kitchen brigade, fostering a collaborative and professional environment whilst maintaining rigorous culinary standards
- Develop, design, and regularly refresh Mediterranean-inspired menus that showcase seasonal ingredients and reflect contemporary culinary trends
- Oversee all aspects of food preparation, cooking, and plating to ensure consistency, quality, and visual excellence across all dishes
- Maintain strict adherence to food safety, hygiene, and sanitation protocols in accordance with international standards
- Manage kitchen inventory, monitor food costs, and optimise procurement processes whilst maintaining quality standards
- Train, mentor, and conduct appraisals of kitchen staff, fostering professional development and career progression opportunities
- Collaborate with front-of-house teams to ensure seamless service delivery and guest satisfaction
- Source and select premium Mediterranean ingredients, with knowledge of local and international suppliers
- Customise menus to accommodate dietary requirements and guest preferences whilst maintaining culinary integrity
- Manage kitchen operations, equipment maintenance, and ensure efficient workflow during service periods
Qualifications
- Minimum 8 years of professional culinary experience, with at least 5 years specialising in Mediterranean cuisine
- Proven experience in a senior kitchen leadership role, managing teams of 10 or more staff members
- Comprehensive knowledge of Mediterranean cooking techniques, ingredients, and regional cuisines
- Demonstrated expertise in menu development, food costing, and culinary innovation
- Strong understanding of food safety regulations, HACCP principles, and kitchen hygiene standards
- Excellent people skills with the ability to lead, motivate, and develop kitchen teams
- Experience working in luxury hospitality, fine dining, or resort environments
- Proficiency in kitchen management systems and food ordering software
- Ability to work under pressure whilst maintaining attention to detail and consistency
- Strong communication and interpersonal skills with the ability to collaborate across departments
- Experience with tropical or Seychellois ingredients and local sourcing
- Knowledge of wine and beverage pairing with Mediterranean dishes
- Experience in staff induction and culinary training programmes
