What you will be doing:
- Overseeing all outlets, Lobby Lounge and Raw Bar, Botanist Restaurant, In Room Dining, Patio and Cabana Bar
- Oversee all Recruitment, Training & Development, and Performance Management of the Food & Beverage division
- Oversee all guest satisfaction metrics
- Ensure service standards are meeting Forbes Five Star Standards
- Monitor inventory, operating pars and oversee plan purchasing
- Communicate additions or changes to the assignment as they arise throughout the shift, identify situations which compromise the department standards and delegate these tasks
- Review staff onboarding to ensure colleagues are set up for success
- Review weekly work schedules for all personnel in accordance with staffing guidelines and adjust schedules to meet business demands
- Regularly audit outlets and review competitive set
- Oversee payroll and accuracy
- Assists in planning and implementing programs, policies, and procedures to ensure that service standards are met.
- To ensure that the Departmental Objectives are cascaded to the colleagues.
- Assists in the co-ordination of special promotions and provides administrative support necessary.
- Interacts with management of other department within areas of responsibility and develops solid working relationships with them.
- Participates in public relations activities, sales calls or other promotional activities designed at enhancing the Image and profitability of the hotel.
- Assist each Outlet Manager in the planning and implementation of effective sales and promotional activities to ensure maximum revenues.
- Monitor financial performance of the Food & Beverage outlets
- Carries out assignments and instructions as delegated by the Director of Food & Beverage ensuring that all company and Hotel Policies and Procedures and minimum standards are always adhered to Review daily activities:
- Attend briefings and share divisional goals with colleagues
- Review forecasted covers and ensure labour for each outlet meets demand
- Ensure outlets are prepared with supplies, tools, and equipment to be successful
- Conduct daily walkthroughs ensuring that standards for service and atmosphere are meeting standards
- Ensure the team is aware of any high-profile guests, groups or additional factors, that effect the Hotel, business and performance
- Review prior days service and make necessary adjustments where needed for the following day
- Attend hotel briefings
- Meet with departmental heads and assist and support outlet leaders
- Monitor and ensure that all opening/closing duties are completed to standard
- Review all cleanliness and ensure ecosure standards are met
- Ensure time is prioritized for guest and team interactions.
- Ensure to cover the outlet manager during their absence
- Other duties assigned
Qualifications
Your experience and skills include:
- Hospitality Management and/or Food & Beverage Management Degree or Diploma preferred
- 4 years' experience in a multi-faceted Food & Beverage operation, including 2 years’ experience as a department head, preferably in a luxury/upscale setting, preferably including free standing restaurant experience, IRD & Stewarding.
- Successful record leading teams that have effectively made progress on guest satisfaction and service delivery
- Ability to work effectively and collaboratively in a demanding, multi-cultural, diverse environment within required deadlines
- Must be flexible to work schedule which includes evenings, weekends and holidays
- Proficient with Micros, Avero and MS Office or similar an asset
