Job Description

As the Cluster Italian Chef, you will be completely responsible for positioning two Italian signature restaurants at Anantara Kalutara Resort and Anantara Peace Haven Tangalle Resort as the best in class authentic Italian cuisine restaurants in the country and leading the operation of the restaurants under the guidance of Executive Chefs.  You must activity involving cooking and leading by example. You should be comfortable in leading and managing the kitchen team and should provide support and training on an ongoing basis. You will be responsible for the quality of Italian cuisine throughout each resort, and it will be your responsibility to ensure only the highest quality of food & beverage for our guests through meticulous consistency, taste and presentation of all dishes. You are expected to work with the Food and Beverage Director on how best to deliver an authentic Italian dining experience in the restaurants and to work closely with Marketing and F&B Teams in promoting Italian Cuisine experiences. Additionally, you will monitor the food inventory monthly, maintaining proper control of orders and purchases and ensuring that all deliveries are received and handled efficiently and in line with hotel standards. You will review the food cost analysis daily to ensure that it is in line with the budget, with the goal of securing profit margins while maintaining the corporate image of the Company at all times. You will also oversee the cleanliness and hygiene of all kitchen spaces and procedures.



Qualifications

  • Candidate MUST be presently Chef de Cuisine or Head Chef for high end Italian signature or fine dining restaurant 
  • Minimum of 2 years of industry and culinary management experience in 5 star hotel.
  • Excellent knowledge of Italian cooking styles
  • Previous experience with controlling food and labour cost, demonstration cooking, menu development, pricing, and training of culinary team members.
  • Eye for detail to achieve operational excellence
  • Passion for leadership and teamwork
  • Excellent guest service skills
