The  Garde Manger Cook  is responsible for the day-to-day execution, preparation, plating and presentation of menu items, as well as station sanitation, organization and adherence to local and federal health code laws and/or policies set in place by Viceroy .   He /She must be able to read English on the order tickets and prep lists and communicate effectively in English or Spanish when required.    In this position, you will be preparing (but not limited to): Salads and other appetizers, cold and hot soups, deep fried items, pastries and other desserts.  You will be handling seafood and shellfish, tree nuts, eggs, dairy and gluten allergens, for both a la carte service and some banquet service.  Flexible hours are preferred, but weekends and holidays are a must.

General Responsibilities include but are not limited to:

  • Participate in the preparation of the storeroom requisitions.
  • Station ready with all supplies & cooking utensils
  • Prepare menu items to chefs specifications consistently and with urgency
  • Read, Write, and communicate prep lists and guest order tickets
  • Make sure sanitation adhered to including HACCP documentations
  • Check pars and amounts and ensure that line is ready for service. 
  • Communicate production progress to the chef de partie or chef on duty
  • Create professional working relationships amongst all fellow colleagues
  • Willing to be part of a team, in an environment that encourages growth, learning, consistency and guest satisfaction.


QUALIFICATIONS:

  • Basic reading skills and basic oral proficiency in the English language.
  • Must be willing to work a flexible schedule in order to accomplish all major responsibilities and tasks.  
  • Must work in a safe, prudent and organized manner.
  • Must have the ability to handle multiple tasks at one time
  • Sanitation and HACCP proficiency.
  • Minimum of 1-2 years of any prep or salad cooking experience in comparable environment.


PHYSICAL REQUIREMENTS

  • Sit, Stand in place and/or walk for extended periods of the day
  • Side bending from sitting, as well as reaching above your height into various shelves for products
  • Must be able to lift 15-30 lb. on a regular basis, and up to 50 lb. boxes occasionally with assistance if required.
  • Must be able to push, pull carts and dollies, carry plates, boxes and refuse of up to 30 lb.
