We are looking for creative Teppanyaki Chef for the Mizu Restaurant.

 

Mizu Teppanyaki Restaurant has a decor inspired by Japanese culture and tradition, mixed with a sophisticated and modern style, the highest quality ingredients, innovative cooking techniques and a privileged view over the Atlantic Ocean.  With signature sushi, breath-taking teppanyaki and unique saké, the dining experience at Mizu is multi-sensory and not to be missed. Overlooking the Atlantic Ocean, this restaurant becomes the best place to experience contemporary Japanese cuisine in the Algarve.

The best of Japanese gastronomy can be experienced here in two totally different ways. For those looking for a more interactive and intimate experience, the Teppanyaki counter, with a capacity of 10 seats and a fixed menu consisting of 6 different dishes, allows a direct contact with the Chef's skills.

 

Job description:

  • Kitchen service activities, complying with the established standards and procedures, in order to ensure the provision of a service of excellence;
  • Functions in compliance with HACCP standards;
  • Functions in accordance with Japanese fine dining standards;
  • Mise en plase;
  • Recipe interpretation;
  • Produce teppan menu;
  • Prepars food and performs for the guests;
  • Responsible for multiple duties while cooking for a group;
  • Food preparation and associated products;
  • Portioning of cooked foods;
  • Plating and decorating food;
  • Cleaning and organisation of the benches assigned to the service.
     

Requirements:

  • Passion for the job, dedication, professionalism and teamwork skills;
  • Experience in Japanese cuisine;
  • Be able to Correctly size each portion and ensure that every dish is reaching the proper temperature according to its serving size;
  • Attention to detail, friendliness, dynamism, willpower and the desire to be more and better at a professional level, always;
  • Cookery Technician Course at a culinary institute;
  • Good knowledge of H.A.C.C.P.
