In this class, you’ll learn how to create the perfect risotto from start to finish. You’ll discover how to choose the right rice and work with high-quality ingredients to elevate your dish. You’ll master key cooking techniques such as sautéing, toasting the rice, and perfecting the mantecatura process for a creamy texture. Along the way, you’ll prepare a variety of risottos, including classic saffron, seasonal asparagus, and refined lemon prawn.

Who is the course for?
In this class, your instructor will be the outstanding Italian chef Danilo Cortellini. Danilo’s love for food started in his childhood, influenced by his family’s culinary traditions in Abruzzo. After training at some of the world’s top starred restaurants, Danilo’s career took him to the Italian Embassy in London, where he served as head chef for 10 years. There, he prepared everything from intimate dinners to grand galas, reconnecting with his roots along the way. In 2015, Danilo became a finalist on MasterChef: The Professionals, showcasing his technical expertise and deep love for Italian cuisine. He’s since made regular appearances on BBC1’s Saturday Kitchen, sharing approachable recipes that charm audiences. Today, Danilo continues to share his passion for Italian cuisine through private events, global consultancy, and engaging social media content, which reaches over 500K followers.
