Rosewood Amsterdam is currently seeking a motivated and dynamic Executive Sous Chef to manage several restaurant outlets at our property. 

Job Summary

The Executive Sous Chef will be responsible for managing several restaurant outlets at the property. He/she/they will organize and set up the kitchen as efficiently as possible to increase speed, maximize productivity and consistency. He/she/they should ensure that all dishes are prepared consistently and according to standard recipes and will assist the Executive Chef and team in ensuring that all culinary standards comply with Company and hotel policies and procedures.

Responsibilities:

  • Schedules working hours of all kitchen staff taking into consideration the volume of expected business. 
  • Arranges extra staff during high volume of business if warranted by unexpected business or dismisses them earlier if business is slow.
  • Carries out full stock taking at the end of each month in collaboration with the Cost Control Department.
  • Is responsible for the quality of all food prepared. Checks constantly all dishes for their taste, temperature and visual appearance. 
  • Coordinates closely with the Executive Chef in determining quality and quantity of daily food products to be purchased and prepared. Informs the Executive Chef immediately for out-of-stock items or none delivered food products.
  • Discusses with the Executive Chef and recommends menu price adjustments when necessary. 
  • Checks with maintenance that all kitchen equipment is functioning properly. 
  • Prevents the use of spoiled or contained products in any place of food preparation and prevents associates who are ill or suffering from infection in taking part in the preparation or handling food.


Our Ideal Candidate: We are looking for a candidate who has experience in a 5 Star Hotel or reputed restaurant in the same capacity and familiarity with culinary operations. He/she/they should have a culinary school certificate, experience in natural products, wellness as well as an awareness on sustainability. Knowledge of English and Dutch is a must. Previous experience in a similar role is required to be considered for this position. This role reports directly to the Executive Chef and is seen as the next in line in managing a large team. The ideal candidate would be managing multiple restaurant outlets as well as In Room Dining.  

A work permit for the Netherlands or EU citizenship is required to be considered for this position.

Rosewood Amsterdam will open in 2024 as Rosewood’s first property in the Netherlands. Housed in the former Palace of Justice, a building of great architectural, historical and social significance that overlooks the Prinsengracht (the Prince’s Canal), one of the city’s most beautiful waterways, in the UNESCO World Heritage listed Amsterdam Canal District. All public spaces will overlook the three distinct, internal landscaped courtyards of the building.
