The Project
We are opening a new Italian bistro and wine lounge in Hanoi, and we are looking for a Head Chef to take the culinary reins. Our philosophy is rooted in artisanal American-Italian traditions. We aren't trying to force innovation; we are redefining traditional cooking by prioritizing absolute ingredient integrity—using the best possible produce where the more you add, the more you take away.
The Role
Joining us 60 to 90 days before launch, you will step out of the corporate machinery and have the autonomy to:
- Finalize and dial in the opening menu.
- Secure and establish relationships with premium local and international suppliers.
- Build, train, and lead the back-of-house team from day one.
- Take full ownership of kitchen operations, quality control, and culinary direction.
- 2500 - 3000 USD
- Private apartment provided directly above the restaurant.
- The Package Base Salary: 2500 - 3000 USD / month (Net). Accommodation: Private apartment provided directly above the restaurant. Bonuses: Quarterly KPI-driven bonuses tied strictly to food cost (COGS) and revenue milestones, aswell as tip sharing and quarterly service charge bonuses. Relocation & Benefits: Full coverage for flights, Vietnam Work Permit, Temporary Residence Card (TRC), comprehensive private medical insurance, and one annual return flight home.

About you
Who We Are Looking For
- A senior sous chef ready to step into a head role, or an established Head Chef currently working in Bangkok's premium dining scene.
- A strong background in high-quality Italian or American-Italian cuisine.
- A leader who thrives in an independent, pre-opening environment and respects artisanal techniques.
- Language required: English. Thai is a plus
