We’re looking for a Bar Manager to join SíSí Glasgow.


SíSí is a rooftop restaurant and bar in the heart of Glasgow's Merchant City, a place built around bold flavours, creative cocktails, great music and even better energy. We’re looking for an ambitious, passionate and commercially minded Bar Manager to take ownership of our bar operation and help us continue to build one of Glasgow’s most exciting cocktail programmes. This is an opportunity for someone who genuinely loves hospitality. Someone who understands that a great bar is about much more than what goes into the glass — it’s about the experience, the atmosphere, the team and the feeling guests leave with.

What You’ll Do


As Bar Manager, you’ll be responsible for the day-to-day running and continued development of the bar, working closely with the senior management team to deliver an exceptional guest experience while driving standards, sales and profitability. You’ll lead from the front, inspiring and developing a talented bar team while maintaining the high standards expected from a cocktail-led venue.


You’ll be responsible for:



  • Leading, motivating and developing the bar team



  • Owning the day-to-day operation of the bar



  • Maintaining consistently high standards of cocktail execution, service and presentation



  • Continuing to develop and evolve our cocktail programme



  • Working creatively with our drinks offering, from signature cocktails and classics to tequila, mezcal, agave spirits and beyond



  • Managing stock, ordering, wastage and GP



  • Building strong relationships with suppliers and staying ahead of drinks and cocktail trends



  • Ensuring all licensing, health & safety and compliance standards are met



  • Managing rotas, training and performance



  • Creating a positive, inclusive and high-performing team culture



  • Working alongside the wider management team to deliver a seamless restaurant, bar and events operation



  • Helping to create memorable experiences for our guests, from relaxed daytime drinks to busy late-night service and rooftop events



Who You Are:


We’re looking for someone with proven experience managing a high-volume cocktail bar or premium hospitality venue.



  • A confident and natural leader



  • Passionate about cocktails, spirits and hospitality



  • Commercially aware, with a strong understanding of GP, stock and labour



  • Highly organised and able to stay calm under pressure



  • A great communicator who knows how to get the best from a team



  • Obsessed with quality and consistency



  • Curious, creative and always looking for ways to improve



  • Comfortable working in a fast-paced, high-energy environment



  • Someone who genuinely enjoys being on the floor and leading by example


Cocktail experience is essential, but we're equally interested in your approach to people. We want someone who can build a brilliant team, develop talent and create a bar culture that people are proud to be part of.
