We focus on high-quality local produce and contemporary, clever culinary experiences that consistently exceed the expectations of our guests across a multitude of venues. With this in mind, we are looking for an exceptional and experienced Head Chef to lead our Faro kitchen team in Berriedale.

At Faro, the focus is on diverse, multicultural, and ever-evolving menus. A wide knowledge base and sharp adaptability are integral, as you will be leading the team in designing and delivering a broad range of food experiences. The gig:

  • Collaborate with the Executive Chef to create and implement individual, exceptional culinary experiences;
  • Drive quality control, maintaining consistently high standards of product, presentation, and asset management;
  • Facilitate smooth, well-managed services to deliver a memorable dining experience;
  • Manage, guide, and mentor kitchen staff across both service and non-service periods;
  • Oversee financials, including ordering, stock management, minimising food costs, and wastage;
  • Own the operational side, from staff rostering and timesheets to strict WHS and hygiene standards;
  • Nurture valuable relationships with our local suppliers.
  • Note: Weekends and public holidays are part of the deal.

 

About you

The you:

  • Significant background in a similar kitchen leadership role;
  • Strong interpersonal skills with a proven track record of motivating and developing teams;
  • A confident cooking style with a willingness to experiment and a deep respect for local produce;
  • Impeccable standards of food hygiene, safety, and organisational cleanliness;
  • Thrives in a regularly changing environment and maintains high standards under pressure;
  • Sharp planning, time management, and administrative skills;
  • A positive, enthusiastic personality who takes pride in teaching others.

The company

Mona is the playground and megaphone of David Walsh, who grew up in Tassie (just down the road from Mona), dropped out of uni, played cards, won, did some other stuff, and opened a small museum of antiquities to which no one came. He declared it a triumph and decided to expand. The result is Mona, a temple to secularism, rationalism, and talking crap about stuff you really don’t know very much about. We won’t tell anyone. Come and play.

There’s art and exhibitions and stuff but also live music, food, wine, bars, restaurants, cellar door, accommodation, library , recording studio, and a tennis court. Mona was designed to be explored—as a space of wonder and experiment—with the O, which you should totally download before you get here. Catch the ferry from Hobart. Sit on sheep.

You could probably speed through everything in three or four hours, but we recommend you hang around—make a day of it.
